近期,我院杨天佑教授在Journal of The Science of Food and Agriculture(中科院二区)发表了题为“Breeding of high-tolerance yeast by adaptive evolution and high-gravity brewing of mutant”的研究论文。本研究采用适应性进化ALE技术成功获得了3株乙醇高耐性突变株,进而探讨了突变株酿造高酒精度啤酒的VHG和VHGAE工艺,研究为高酒精度啤酒的酿造提供了优良菌种和技术支撑。河南科技学院为该论文的第一单位和通讯单位。此项研究得到了河南省重点研发与推广专项(科技攻关)和财政部和农业农村部:国家现代农业产业技术体系项目等项目资助。
该论文是作者继2022年8月发表“Mutation screening and transcriptomic analysis of the ethanol-tolerant mutant S.cerevisiae YN81 for high-gravity brewing”(Frontiers in Microbiology,中科院二区)后,又一篇有关酿酒酵母高鲁棒性研究的论文。近年来该团队在高鲁棒性酿酒酵母选育和酵母的逆境胁迫及耐受研究方面取得了一定进展。
